We had the chance to taste the creamy risotto with truffle of the season, one of the chef’s wonders. The velvety texture of rice, soaked in a creamy cream, harmoniously combines with the intense aroma of fresh truffle. Our choice also turned to the return of fishing, consisting of a net of sea bream, sweet potatoes in khaki and mushrooms. Sea bream is prepared with a soft texture. Sweet potatoes with khaki add a sweet note, and wild mushrooms contribute to the wild flavor.
And to accompany this delicious meal, we chose the Soleia Spritz, based on our orange liqueur. This cocktail, as refined as it is captivating, brings a fascinating freshness that perfectly balances the richness of the dishes.
